Lazy Ramen Lo Mein

It’s better and QUICKER than take-out!

Who is feeling tired and lazy and extra slumpy today? I know I woke up super tired- just wish there was onnnnnne more day off of work (or 3).

How was everyone’s weekend?! What’d ya do? I spent the 4th at my Aunts beautiful home on the beach, and ate too much good food. I still don’t know what can beat a good summer BBQ, especially when your surrounded by your family & friends.

Good food + time off with your loved ones = happiness.

SO if you’re feeling sluggy today like me, and you’ve just realized that your body needs food to live, but cooking seems like a lot of effort (rewind to last night when I actually laid on the couch until 10pm before I started dinner) this is the meal for you. It’s super quick to throw together, and you have a super GREEN lo mein PACKED with all the best flavors. I kid you not! I dare you to try for yourself.  😉

This is one of those meals that [successfully] comes together when you need to make a last-minute-2-second dinner, but whole foods feels sooooo faaaaaaar. So the local veggie stands & market on the corner will do the trick! And if you don’t have a package of ramen, substitute it with your favorite noodle or spaghetti!  RESIST the urge to do Seamless & have food delivered right to your door. THIS is the healthier way!

I N G R E D I E N T S:

  • 1 9.5oz package of Ramen Noodles (or any type of pasta!)
  • 1/2 an onion, diced
  • 1/2 green pepper, sliced & diced
  • 2 cups of broccoli
  • 2 cups of mushrooms, sliced
  • 1 cup of cabbage, chopped
  • 1 inch knob of ginger, minced
  • 2 cloves of garlic, minced
  • Small bunch of green onions
  • Dash of garlic powder
  • Pepper to taste!
  • Sesame oil to sauté

SAUCE

  • 1 Tbs of Sriracha
  • 4 Tbs of Soy sauce
  • 1 Tbs of rice wine vinegar
  • 1 tsp of pure maple syrup
  • 1 tsp of Sesame oil

PREPARE: Begin by slicing up your veggies and set aside. As you notice, there are A TON of veggies and everything cooks super quick so this part is key! Also, make your saucey mix now so you have that ready to go.

VEGGIN: In a medium saucepan, bring water to a boil. While you’re waiting for that, in a large skillet over medium heat, splash a little bit of sesame oil. Once hot, toss in all your veggies + the garlic and ginger. Sauté veggies until soft- about 8-10 minutes. Add a little pepper and garlic powder too!  While that is cooking, go back to your now boiling water & throw in your ramen noodles. Cook according to instructions (should only be a max of 5 minutes!) and drain. Veggies should be done, and you’re almooooost there.

COMBINE: Now, slowly toss your ramen with the veggies so all combines evenly (I find this is easiest with a good ol’ pair of tongs, a little bit of patience, and small portions at a time). Once all incorporated, pour in your sauce mixture and toss well. Adjust to taste with additional spices or hot sauce! Serve immediately and enjoy. Just.so.good. Ugh

*Notes: You can totally adjust the sauce to your preference if you find it too sweet or salty, or spicy! ALSO- DUH- you can add in as many veggies as you desire! This meal came together when I didn’t know what to make for dinner so I grabbed all the veggies around and threw it together. Sometimes those are the best meals for a lazy night 😉
